Method

  • First of all you have to heat oil in a pan. You can make any curry with refined oil, desi ghee or mustard oil. When the oil is hot, you have to add fenugreek seeds and mustard seeds in it. After this, crush green chillies and garlic and then put them in the pan.
  • Along with this, you also have to add curry leaves and a pinch of asafoetida in oil.
  • Now dissolve 1/2 bowl of gram flour in buttermilk in a big vessel. Keep in mind that when you are mixing gram flour in buttermilk, you should not leave any lumps in it. By doing this, while cooking the curry, the kernels become hard and the taste of the curry does not taste good.
  • Now put this solution in the pan and keep stirring it with your hands. If you do not do this, the buttermilk will start curdling. When the solution starts thickening, add as much water as you have added to the pan. After this, let this solution cook.
  • While on one side the batter will be cooking in the pan, on the other side you can prepare to make pakodas. For this, dissolve half a cup of gram flour thickly in water. Heat oil in another pan and then fry small dumplings in it. Do not touch the pakoras as soon as they are put in the pan, this will cause them to break. After frying the pakoras, keep them in a separate vessel.
  • When the batter starts boiling, put the pakodas in it and let it cook till the next boiling. Let us tell you that do not let the batter become too thick because after the pakodas are made, it becomes more thick.
  • Now prepare to apply tadka on top. For this, take desi ghee in a pan and add mustard seeds and red chillies in it. Add tempering to the curry with this and garnish with chopped green coriander. Your kadhi is ready to serve. You can serve it with roti and rice.
